- For the cheese sauce
- ½ bunch Chives
- 200 grams Goat cheese
- 4 Tbsps Crème fraiche
- salt
- freshly ground peppers
- 1 splash lemon juice
- For the salmon cream
- 120 grams Smoked salmon (in slices)
- 80 grams cream cheese (pure)
- 800 grams Crème fraiche
- 3 Tbsps Crème fraiche
- 1 splash lemon juice
- Also
- 6 leaves Iceberg lettuce
Preparation steps

For the cheese sauce, rinse the chives, shake dry, place some straws for garnish aside, and cut the rest into small rings. Puree the goat cheese with the crème fraîche in a blender finely, season with salt and pepper, and stir in the chives and lemon juice. Divide the cream sauce into 4 glasses and refrigerate.

For the salmon cream, cut the salmon into small cubes. Puree the cream cheese with the sour cream, the creme fraiche and salmon cubes in a blender. Season with salt and pepper, and stir in the lemon juice. Spread over the cream sauce in the glasses.
Rinse the lettuce leaves, shake dry, cut into strips and arrange over the salmon cream in the glasses. Serve garnished with chives.
