Salmon Gratin with Leeks and Bread Rings

- 1 red paprika
- 1 stick Leeks
- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 50 grams marbled Bacon
- salt
- freshly ground peppers
- 4 eggs
- 200 grams Whipped cream
- 600 grams Salmon (skinless)
- butter (for the pan)
- 1 Tbsp lemon juice
- 120 grams grated Shredded cheese
- 4 slices white bread (such as crustless toast)
- egg yolks (for brushing)
- 1 Tbsp finely grated Parmesan
Preparation steps
Rinse bell pepper and halve, remove seeds and ribs and cut into small pieces. Rinse and dry leek and cut into thin rings. Peel onion and garlic and chop finely. Heat oil in a pan and saute onion and garlic. Cut bacon into cubes, add to the pan and saute fro a few minutes. Add bell pepper and saute briefly. Remove pan from stove. Season with salt and pepper.
Whisk eggs and combine with cream. Add to the vegetable and bacon mixture, season to taste. Cut salmon into pieces and arrange in a buttered casserole dish, season with salt and lemon juice. Top with vegetables and cream mixture. Sprinkle with cheese and bake in preheated oven at 200°C (approximately 400°F) for about 45 minutes or until golden brown.
Cut out rings out of bread slices. Brush with beaten egg yolk and sprinkle with Parmesan cheese. Bake in preheated oven until golden brown. Arrange bread rings on a salmon gratin and serve.
