500 grams Salmon
1 egg
2 Tbsps breadcrumbs (as needed)
½ tsp ground paprika (sweet)
1 pinch cayenne pepper
4 Pita bread

Preparation steps

Rinse the cucumber and cut lengthwise into thin slices. Trim the pepper, rinse, remove seeds and ribs and cut into wedges. Rinse the cilantro, shake dry and finely chop the leaves. Rinse the tomatoes, cut into quarters, remove the core and seeds and chop the pulp small. Mix the tomato cubes with about 2/3 the cilantro, vinegar, 1 tablespoon oil and sugar, and season with salt and pepper.

Soak the toast in a little lukewarm water. Peel the shallots, chop finely and sauté until translucent in 1 tablespoon hot oil. Then remove from heat. Rinse the salmon, pat dry and finely dice or chop. Mix well with the shallots, egg, remaining cilantro and expressed toast. Knead as required with the crumbs to a well-moldable material. Season with salt, paprika and cayenne pepper and form 4 patties. Cook the salmon patties in remaining hot oil on both sides for 3-4 minutes.

Heat the pita bread if desired and cut on one side. To serve, fill with the salmon patties, tomato salsa, peppers and cucumbers.
