16 ozs Salmon fillet (skin removed)
2 Tbsps olive oil (plus extra for grill grate)
1 Tbsp fresh squeezed Orange juice
¼ cup honey
1 Tbsp Rice vinegar
1 tsp fennel seeds
½ inch fresh ginger (grated)
1 clove fresh garlic cloves (peeled and minced)
1 small onion (peeled and cut into strips)
4 strips fresh Orange peel
freshly ground Black pepper (to taste)

Preparation steps

Rinse salmon under cold running water and pat completely dry with paper towels. Remove any bones. Using a sharp knife, slice the salmon into bite-size pieces. Thread salmon onto skewers and place in a shallow dish.

In a small bowl, whisk together olive oil, orange juice, honey, rice wine vinegar, fennel seed, ginger, garlic, onion and orange peel. Season to taste with pepper. Pour mixture over skewers, turning to coat. Let stand at room temperature for 30 minutes. Transfer marinade to a small saucepan, and simmer for several minutes.

Prepare grill for direct grilling and preheat to medium-high heat.

Lightly oil grill grate. Place the salmon skewers on the preheated grill and cook for 4 minutes per side, brushing frequently with marinade, or until fish flakes easily with a fork.
5.
Transfer to a serving platter or individual plates, drizzle with any remaining marinade and serve.
