300 grams potatoes
1 Tbsp chopped parsley
Zucchini (1/3 green and yellow)
1 Red Bell pepper
1 stalk Celery
1 carrot
2 Tbsps butter
4 pcs Salmon (each about 200 grams)
3 Tbsps vegetable oil
salt
freshly ground peppers

Preparation steps

1.

Scrub potatoes thoroughly and slice into very thin slices, mix with 1 tablespoon of oil and parsley and arrange next to each other on a lightly oiled baking sheet. Bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes. Remove from the oven and season lightly with salt.

Rinse zucchini and cut into slices. Rinse and halve pepper, remove seeds and ribs and cut into small pieces. Rinse celery and cut into 1 cm (approximately 1/2 inch) pieces. Rinse, peel and dice carrot.

3.

Heat butter in a saucepan and saute vegetables for about 6 minutes. Season with salt and pepper and keep warm.

4.

Season salmon with salt and pepper and grill on an oiled grill for about 3-4 minutes per side. 

5.

Arrange salmon with vegetables and potatoes on plates and serve.
