Salmon with Baked Potatoes
Ingredients
- For the salmon
- 4 Salmon
- 1 Tbsp Pastry flour
- 2 Tbsps lemon juice
- salt
- freshly ground pepper
- 2 Tbsps vegetable oil
- For the sauce
- 1 Tbsp shallots (chopped)
- 4 Tbsps colorful peppers
- 100 milliliters aged balsamic vinegar
- 1 Tbsp sugar
- 2 Tbsps butter
- Baked potato
- 6 small potatoes
- Sea salt
- freshly ground pepper
- vegetable oil
- 1 pc Horseradish (About 3 cm)
Preparation steps
For the potatoes: Scrub potatoes thoroughly and cut into slices. Drizzle oil on a baking sheet, place potato slices on it and season with sea salt and pepper. If necessary add a little oil on top of the potatoes. Cook potato wedges in a preheated oven at 200°C (approximately 400°F) for 20 minutes.
For the sauce: Sauté chopped shallot in a little oil until caramelized. Add vinegar to the pot and season with pepper. Let reduce for about 10 minutes and keep warm.
For the salmon: Rinse the salmon fillets, pat dry and drizzle with lemon juice. Cover fillets with flour and season with salt and pepper. Heat oil in a pan and fry the salmon fillets on both sides until the outside is crisp, then place under the broiler briefly to cook through. Finely grate the horseradish. To serve, spoon sauce onto preheated plates and place the salmon on the sauce. Add the baked potato, top salmon with more sauce and garnish with horseradish.
