Preparation steps

Rinse salmon, pat dry and season with salt, pepper and lemon juice. Rinse Brussels sprouts, trim, remove outer leaves and cut in half. Add Brussels sprouts to a saucepan with 1 cup of water, salt to taste and ½ teaspoon lemon juice. Cover and cook over medium heat for 5 minutes. Dice bacon finely. Peel the onions and chop finely. Fry the bacon in a pan, add onions and fry until onions are soft. Drain Brussels sprouts and mix with the bacon mixture. Keep warm. Place croquettes in the oven and cook according to package directions.

Heat butter in a pan with the bacon fat drippings and fry the salmon fillets on both sides for about 4 minutes. Distribute among plates with Brussels sprouts and croquettes. Sprinkle the salmon with freshly ground pepper and serve.
