4 Salmon cutlets (each about 180 grams)
3 Tbsps lemon juice
salt
freshly ground peppers
1 gram Prosciutto
50 grams Pastry flour
2 Tbsps olive oil
250 milliliters white wine
Lemon wedge

Preparation steps

1.

Rinse and pat dry salmon, drizzle with lemon juice and season with salt and pepper. Cut ham into small cubes.

2.

Place flour on a plate and coat fish with it, tap off excess flour. Heat oil in a nonstick pan and cook salmon for about 3 minutes per side on medium heat. Remove from the pan and keep warm.

3.

Saute diced ham in the remaining oil and deglaze pan with wine. Reduce on high heat to about 2/3. Season to taste. 

4.

Arrange salmon on plates and drizzle with sauce. Garnish with lemon wedges and serve.
