1 organic lemon
1 red chili pepper
1 garlic clove
600 grams Spinach
5 Tbsps olive oil
salt

Preparation steps

1.

Rinse the salmon and pat dry. Rinse the lemon in hot water, grate the zest and squeeze out the juice. Coat the salmon with the lemon zest and the juice.

Rinse the chile pepper and cut into rings. Shower over the salmon, cover and leave to marinate for about 15 minutes.

Separate the garlic. Rinse the spinach thoroughly and remove any tough stems.

Heat some oil in a pan and sear the salmon on each side for 2-3 minutes. Season with salt and pepper.

Heat some oil in a saucepan and crush the garlic into it. Add the spinach and allow it to wilt. Season with salt, pepper and nutmeg.

4.

Tear the salmon into pieces and arrange on plates together with the spinach.

Drizzle with some oil and serve garnished with lemon slices.
