Preparation steps

Peel zucchini, carrot and shallots, rinse scallions. Cut shallots into rings and cut the rest of vegetables into 8 cm thin strips (approximately 3 inches). Halve lemon and cut into 4 thin slices. Squeeze juice from remaining lemon and mix with 2 tablespoons of oil, toss with vegetables. Season with salt and pepper.

Preheat the oven to 200 ° C convection.

Brush four sufficiently large pieces of parchment paper with oil.

Rinse salmon, pat dry and season on both sides with salt and pepper. Place on paper and top with vegetables. Top with lemon slices, fold in paper tightly and bake in preheated oven at 200°C (approximatley 400°F) for about 20-25 minutes. Remove from the oven and uncover carefully, serve.
