- For the fritters
- 450 grams Zucchini
- 2 eggs
- 3 Tbsps Pastry flour
- 1 tsp freshly chopped thyme
- salt
- freshly ground peppers
- 4 Tbsps vegetable oil
- For the salmon
- 600 grams Salmon (ready to cook, skinless)
- lemon juice
- 30 grams butter
- 8 sprigs Lemon thyme
Preparation steps
1.
For the fritter, rinse the zucchini, trim, halve lengthwise, remove seeds and finely grate. Mix with the eggs, flour and chopped thyme. season with salt and pepper. If the mixture is too moist add extra flour.

Heat 2 tablespoons oil and spoon small heaps into the pan. Flatten and saute until golden brown on both sides.

Preheat the oven to 180°C (approximately 350°F). Keep the finished fritters warm in the oven.

Wash the fish and pat dry. Season with salt and pepper and sprinkle with a lemon juice. Heat remaining oil and saute for about 2 minutes on both sides. Melt the butter in the pan, sprinkle the thyme on the salmon, reduce the heat and let cook for 5-6 minutes covered.
5.
Serve the fritters with the salmon on a warm plate.
