Salsify with Orange Sauce and Hazelnuts

- 1 ½ kilograms Salsify
- 1 organic lemon
- Iodized salt
- 2 allspice
- 80 grams Hazelnuts
- 2 organic Oranges
- 3 Tbsps butter
- 1 tsp brown sugar
- 1 Tbsp lemon juice
Preparation steps
Rinse salsify thoroughly under cold running water. Wearing rubber gloves, peel salsify. Rinse lemon in hot water and cut into quarters. Bring water to a boil in a large skillet with high sides or a large pot. Add salsify, lemon wedges and allspice. Cook until al dente, 8-10 minutes.
Meanwhile, cut the hazelnuts into thin slices and toast in a dry frying pan until golden-brown and fragrant. Rinse oranges with hot water. Remove zest from one orange with a vegetable peeler and squeeze juice from both oranges.
Drain salsify in a colander.
In a pan, cook salsify in melted butter. Add sugar and orange zest and cook briefly until caramelized. Deglaze with orange juice and simmer 5 minutes.
Season with lemon juice and salt. Divide salsify among warmed plates, top with sauce, sprinkle with hazelnuts and garnish with orange zest.
