800 grams small, waxy potatoes
80 grams fine salt
For the mojo sauce
1 generous pinch Chili powder
2 garlic cloves
2 tsps sweet paprika
½ tsp ground Cumin
½ tsp salt
4 Tbsps Red wine vinegar
6 Tbsps Corn oil

Preparation steps

Rinse the potatoes, pat dry and place in a large pot. Pour in enough water to cover the potatoes halfway. Spriknle with the salt, bring to a boil, cover and cook over medium heat for 20 minutes while shaking the pot several times. Uncover and cook over high heat until the cooking liquid is evaporated. Continue to cook, stirring constantly, until the skin is wrinkled and the potatoes are coated with a light salt crust.

For the mojo sauce, peel the garlic, coarsely chop and mash with the chili powder, paprika, cumin, salt and vinegar. Gradually add the oil to taste. Place the potatoes in a warmed bowl and the mojo sauce in a separate bowl. Serve with seared meat or grilled fish.
