½ tsp Dried rosemary
53 ozs coarse Sea salt
4 egg whites

1 unwaxed lemon (in wedges)

Preparation steps

1.
Rinse the fish and pat dry. Season the inside and outside of the fish with pepper. Wash the parsley, shake dry then place inside the belly cavity of the fish.

Heat the oven to 220°C (200° fan) | 425F | gas 7.

Place the thyme, rosemary and salt in a large bowl, whisk the egg white, then fold into the salt. Add a little water if necessary. place half of the salt mixture on a baking tray lined with baking paper and put the fish on top. Now cover the fish with the remaining salt mixture. Press the mixture down firmly and smooth to seal any cracks.

Bake in the oven for 25-30 minutes. Serve the fish in the salt crust and crack the crush at the table. Serve with lemon wedges.
