For the pastry
1 ½ cups all-purpose flour
½ cup butter
1 pinch salt
1 egg
For the filling
1 ⅔ cups Feta (crumbled)
1 onion (chopped)
1 ⅔ cups peas (frozen)
1 bunch Chives (chopped)
3 cloves garlic cloves (finely chopped)
4 eggs
cup cream (48% fat)
salt
freshly ground Black pepper

Preparation steps

1.
for the pastry: put the flour in a heap on a work surface, mix with the salt and make a well in the middle of the flour. Cut the butter into small pieces and scatter around the well. Break the egg into the middle and chop all the ingredients with a knife until they have the consistency of breadcrumbs. Quickly knead to a dough by hand, form into a ball, wrap in clingfilm and chill for about 30 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a 23 cm|9" springform flan tin.

For the filling: mix together the cheese, onion, peas, chives and garlic.

Whisk the eggs and stir in the cream. Season with salt and pepper.
5.
Roll out the pastry on a floured surface and line the tin.
6.
Spread the pea mixture on the pastry, pour the egg and cream mixture over and bake for about 35 minutes until the filling is set. sprinkle with ground pepper. Serve warm.
