2 sprigs parsley (finely chopped)
2 sprigs mint (finely chopped)
0.333 cup olive oil
lemon juice (from one lemon)

Preparation steps

1.
Pour the couscous into a measuring jug then into a large bowl. Add the same volume of boiling water, mix well and set aside for 15 minutes.
2.
Add the chopped cucumber, tomatoes, parsley and mint then stir in the olive oil and lemon juice and season with salt and pepper and set aside for another 15 minutes.
3.
Stir through the feta cheese and serve immediately.
