- 1 cup all-purpose flour
- 5 Tbsps powdered sugar
- 1 pinch salt
- 0.333 cup unsalted butter (diced)
- 1 small egg yolk
- 5 Tbsps chopped Pistachio

Preparation steps

Mix together the flour, icing sugar and salt in a mixing bowl.

Rub in the butter until the mixture resembles fine breadcrumbs. Add the egg yolk and mix to a dough.

Knead in the chopped pistachios. Roll the dough into a log, approximately 3cm|1" in diameter. Wrap in cling film and chill for 2 hours.
4.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line a large baking tray with non-stick baking paper.
5.
Slice the dough into rounds and place on the baking tray. Bake for 15 minutes, until light golden.
6.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
