800 milliliters Vegetable broth
400 grams Sauerkraut

1 pinch sugar
1 tsp apple cider vinegar
cayenne pepper

Preparation steps

1.

Peel onion, halve and cut into strips. Heat oil in a saucepan and saute onion until translucent. Stir in tomato paste and deglaze the saucepan with broth. Add well-drained sauerkraut, cover and simmer for about 45 minutes.

Season to taste with salt, sugar, vinegar and cayenne pepper. Transfer to deep plates or soup bowls and serve garnished with kiwi.
