1 kilogram Cherry tomatoes (on the vine)
4 garlic cloves
4 sprigs rosemary
1 handful thyme
4 fresh bay leaves
5 Tbsps olive oil

Preparation steps

Preheat the oven to 180°C (approximately 350ºF).

Rinse the tomatoes. Peel and dice the garlic. Rinse the rosemary and thyme, shake dry and pluck the leaves from the stems.

Distribute the tomatoes, garlic, herbs and bay leaves equally across 4 serving casserole dishes and gently mix with 4 tablespoons of olive oil. Season with salt and pepper and cook for about 20 minutes in the oven.

Rinse the sausages, pat dry and cook in some oil in a grill pan until golden brown on all sides.

Remove the baked tomatoes from the oven and lay the sausages across them.

Serve immediately in the casserole dishes.
