Ingredients
- For the cream puffs
- ½ tsp salt
- 50 grams butter
- 150 grams Pastry flour
- 4 eggs
- For the filling
- 300 grams cream cheese
- 150 grams Crème fraiche
- 50 grams freshly grated Cheese (such as Fontina or Gruyère)

- 1 generous pinch sweet ground paprika
- freshly ground peppers
Preparation steps
Preheat the oven to 200 ° C convection.
For the dough, combine 250 ml (approximately 1 cup) of water, salt and butter in a pot and bring to a boil. Add the flour and stir with a wooden spoon until the dough forms a ball. Pour the mixture into a bowl, immediately stir in the eggs, one at a time, fully incorporating before adding the next egg. Transfer to a piping bag and pipe about 15 portions onto a parchment-lined baking sheet.
Bake until golden brown, about 25 minutes. Remove and let cool slightly. Halve the puffs and let cool completely.
For the filling, stir together the cream cheese, creme fraiche, cheese and paprika until smooth. Season with salt and pepper. Transfer the mixture to a piping bag. Fill the puffs with the savory cheese mixture. Garnish as desired with walnuts, olives and tomatoes.
