- 200 grams Daikon radish
- 4 Tbsps Cress
- 3 eggs
- salt
- 50 grams butter (melted)
- 100 grams Herb quark
- 100 grams Pastry flour
- 120 milliliters milk
- 1 Tbsp finely chopped Fresh herbs
- 1 Tbsp vegetable oil (for greasing)
Preparation steps

Peel and grate radish. Season with salt and soak in water for about 10 minutes. Remove and pat dry. Rinse cress and spin dry.
Separate eggs. Beat whites with 1 pinch of salt until stiff. Beat yolks with butter until fluffy, then stir in quark. Fold in flour, then milk, then egg whites and herbs.
Grease a waffle iron with a little oil and pour in a little batter. Cook until cook until golden brown on each side. Remove and keep warm. Repeat to cook 8 waffles.

Plate 4 waffles and spread radish on each. Top with another waffle and serve sprinkled with cress.
