- 9 ozs green Olives (pitted and chopped)
- 1 lemon (juice)
- 3 Tbsps Caper (drained)
- 1 clove garlic cloves
- 3 Tbsps chopped parsley
- ½ cup extra virgin olive oil
- Sea salt
- freshly ground Black pepper
Preparation steps
1.
Put the olives in a food processor with the lemon juice, capers, garlic and parsley. Blend until just combined.
2.
Pour in sufficient olive oil to make a puree. Season to taste with salt and pepper.
3.
Spoon into cold sterilised jars and store in the refrigerator for up to 1 week.
