14 ozs turkey breasts (ready to cook)

2 cups chicken stock

Preparation steps

Rinse bell peppers, trim and cut into 1 - 1 1/2 inches large cubes. Trim mushrooms and cut them in half. Rinse tomatoes, remove stalks, and chop. Peel onion and cut into fine strips. Rinse chile pepper, trim, remove seeds and finely chop as desired. Peel ginger and grate finely. Rinse meat, pat dry, and cut into bite-size pieces.

Pour oil in a preheated pot and brown meat on all sides until light brown. Add onions, ginger and chile pepper to pot and sauté. Add bell peppers and mushrooms and sauté briefly. Add broth and deglaze, add meat again and let simmer over low heat for 10-15 minutes. In the last 3-4 minutes, add diced tomatoes. Rinse oregano, shake dry, pluck leaves and add to the stew. Season well with salt, pepper, nutmeg, allspice and cumin.
