Preparation steps

1.

Peel citrus, remove the white pith and cut the fruit segments from the separating membranes, collecting juice. Finely chop the segments. Mix the collected citrus juices with the honey and lime zest and stir in the citrus pieces.

2.

Rinse the scallops, pat dry and sear on both sides in a hot skillet with butter for 2-3 minutes. Add chestnuts and sauté briefly. Season with salt and cayenne pepper and arrange on plates. Serve drizzled with the citrus vinaigrette.
