- ½ Vanilla bean
- 2 Oranges
- ⅛ l Vegetable broth
- 1 carrot
- Rock salt
- freshly ground white peppers
- 1 generous pinch cinnamon
- 2 tsps butter
- 6 ready to cook Scallop
- Chickpea flour
- 1 Tbsp Ghee
Preparation steps

Juice one orange and cut the other into segments. Remove the seeds from the vanilla bean and combine with the orange juice and vegetable broth in a saucepan. Peel the carrot and finely grate into the saucepan. Bring the mixture to a boil and allow to reduce down to 1/3. Season with salt, pepper and cinnamon. Remove from heat and stir in the butter.

Rinse the scallops, pat dry, season with salt and pepper and dust with chickpea flour. Heat the ghee in a large pan and cook the scallops for about 2 minutes on each side, until golden brown. Divide onto small plates, serve with the orange segments and drizzle with the sauce.
