½ cup butter (softened)
¼ cup superfine caster sugar (plus extra for sprinkling)
1 ¼ cups all-purpose flour
1 tsp vanilla extract (optional)

Preparation steps

Preheat the oven to 190°C (170 fan) | 375°F | gas 5.

Cream the butter and sugar until pale and creamy. Beat in the flour a little at a time until thoroughly incorporated.
3.
Turn the dough out onto a floured surface and roll out to 1 cm thickness. Cut out equal sized rounds or fingers and place on a baking tray. Refrigerate for 20 minutes.
4.
Bake in the oven for about 20 minutes or until pale gold. Set aside to cool on a wire rack, then dust with sugar.
