Preparation steps

1.

Whisk the eggs with the milk until light and frothy. Season with salt, pepper, and nutmeg. Heat the olive oil in a non-stick pan and pour in the eggs. 

2.

Scramble the eggs by repeatedly moving a spatula from the edge of the pan to the center. Rinse the spinach and cut into thin strips. Fold the spinach into the eggs just before serving.
