6 Scallop (cleaned with roe attached)
3 cups baby Spinach (washed)
1 cup double cream
3 eggs
¼ cup all-purpose flour
½ tsp ground Nutmeg

Preparation steps

1.
Preheat the oven to 180°C (160 fan) | 350°F | gas 4.
2.
Arrange the scallops and spinach in the base of a gratin dish. Season well with salt and pepper.
3.
In a food processor, blitz together the cream, eggs, flour and nutmeg until smooth. Pour the batter over the scallops and spinach and season the surface again.
4.
Bake for 20-25 minutes until the top is golden brown and slightly puffed. Serve immediately.
