28 ozs Tuna
3 Tbsps soy sauce
For the dressing
3 Tbsps sesame oil
1 Tbsp Fish sauce
3 Tbsps soy sauce
1 pinch sugar
2 Limes (juice)
salt

For the salad
5 ozs Glass noodles
3 ¾ cups sugar Snap pea (halved)
4 red chili peppers (finely sliced)
1 bunch scallions (sliced)
1 Tbsp sesame oil
2 Tbsps white Sesame seeds
2 Tbsps black Sesame seeds
To garnish
1 bunch cilantro (chopped)

Preparation steps

1.
Marinate the tuna in the soy sauce for 30 minutes.

For the dressing: whisk together all the ingredients.
3.
For the salad: put the glass noodles into a bowl, pour boiling water over and stand for 5 minutes. Drain and rinse in cold water. Drain well.
4.
Blanch the peas in boiling salted water for 4 minutes. Drain and rinse in cold water and drain again.
5.
Toss the noodles and salad vegetables in the dressing.
6.
Heat the sesame oil in a wok or frying pan and sear the tuna quickly on both sides. Roll in the sesame seeds and slice thickly.
7.
Divide the salad between serving plates. Add a few slices of tuna and garnish with coriander.
