For the tuna
¼ cup Nut oil
4 Tuna medallions (150 g each)
½ cup Sesame seeds
1 Romaine lettuce (leaves separated and washed)

For the dressing
¼ cup Nut oil
1 Tbsp white wine vinegar
1 tsp Dijon mustard

Preparation steps

Make the dressing by whisking together the white wine vinegar with some seasoning in a small mixing bowl. Add the mustard and whisk again until smooth.

Whisk in the oil in a slow, steady stream until incorporated and you have a thickened dressing.

Pre-heat the grill to hot.

Rub the tuna medallions with the groundnut oil and season well. Press both their sides into the sesame seeds to make a crust.
5.
Grill for 2 minutes on both sides until the sesame seeds are lightly toasted and the tuna is just seared but pink in the middle.
6.
Remove from the grill and sit on serving plates. Garnish with the lettuce leaves and dress them before serving.
