200 grams sugar
1 Cinnamon stick
½ l milk
1 pinch salt
½ fresh lemon (zested)
75 grams Semolina flour
3 eggs

Preparation steps

1.

Rinse and quarter plums, pit. Combine plums with 100 grams (approximately 3 1/2 ounces) of sugar, cinnamon stick and 100 ml (approximately 3 1/2 ounces) of water. Bring to a boil and simmer for about 5-10 minutes or until plums are soft. Let cool down.

Combine milk with salt and lemon zest, bring to a boil. Remove from heat, stir in semolina and let swell.

Separate eggs. Beat egg whites with 50 grams (approximately 1.7 ounces) of sugar until stiff. Beat egg yolks with remaining sugar until frothy and add to semolina mixture. Fold in egg whites.

4.

Pour pudding into 4 bowls and refrigerate for 2 hours.

5.

Before serving, remove cinnamon stick and top with plums. Garnish with mint leaves and serve.
