For the bagels
225 grams Pastry flour
½ cube fresh Yeast
½ tsp sugar
½ tsp salt
25 grams softened butter
50 grams Sesame seeds (for sprinkling)

vegetable oil (for greasing)

150 grams cream cheese
2 Tbsps Mayonnaise
1 Tbsp Mustard
1 pkg Fresh herbs
20 grams Tilsit cheese
50 grams Prosciutto
3 dried Tomatoes
2 Cucumber
3 caperberry
salt

Preparation steps

1.

For the bagels: Place flour in a bowl and create a well in the center. Dissolve yeast and sugar in 1/8 liter (approximately .5 cup) of lukewarm water and pour into the well. Mix in a little flour, cover and let rise in a warm place for about 10 minutes. Sprinkle salt and butter onto the flour and add 1/8 1iter (approximately .5 cup) of water. Knead with a dough hook for 4-5 minutes. Cover and let rise in a warm place for 1 hour more.

Grease 2 baking sheets. Knead dough again, form into a roll and cut into 8 equal portions. Shape into bagels, taking care to firmly press ends together. Brush the top of each with milk and sprinkle with sesame seeds. Let rise for 15 minutes more.

Bake in an oven preheated to 225°C (approximately 440°F) until light brown, about 25-30 minutes.

For the topping: Combine smoked ham, cheese, pickles, capers and dried tomatoes in a food processor. Combine all topping ingredients and season with salt and pepper. Slice bagels and spread on topping. Garnish with fresh dill and serve.
