- 400 grams Sole
- 2 Tbsps lemon juice
- 300 grams shrimp (ready to cook)
- 500 grams Green beans (beans preferably)
- 4 thick carrots
- 1 bunch Dill
- 1 onion
- 1 garlic clove
- 2 Tbsps clarified butter
- salt
- peppers
- 100 milliliters white wine
Preparation steps

Cut the sole fish into bite-size pieces, sprinkle with lemon juice and refrigerate. Rinse the green beans, trim and blanch in plenty of boiling water for 8 minutes. Peel the carrots, cut into sticks and blanch for 3 minutes with the green beans. Drain the green beans and carrots, and rinse with cold water. Rinse the dill, shake dry and pluck smaller leaves. Peel the onion and garlic, and dice both finely.

Heat the clarified butter in a large pan and saute the onion and garlic in it. Add the remaining vegetables and cook briefly. Add the sole pieces and the shrimps. Add the white wine, close the pan with a lid, and simmer for about 5 minutes over low heat. Cook until done. Season with salt and pepper, garnish with dill. Serve in bowls.
