Ingredients

For the shrimp
600 grams Shrimp tail (peeled, ready to cook)
2 Tbsps finely chopped Fresh herbs (parsley, dill)
60 grams scallions
1 garlic clove
1 chili pepper
salt

For the sauce
500 grams tart Apple (rinsed and quartered)
½ tsp organic Lemon peel
900 grams sugar
75 grams red chili peppers
75 grams green chili peppers
50 grams finely chopped onions
125 milliliters apple cider vinegar

Preparation steps

For the shrimp: Minc shrimp and combine with herbs in a bowl. Rinse scallions. Peel garlic. Rinse chile and remove seeds and ribs. Mince scallions, garlic and chile, then add to bowl. Season with salt and pepper and mix well. Shape mixture into about 40 gram (approximately 1.5 ounce) balls and chill.

For the sauce: Boil apples in 250 ml (approximately 1 cup) of water. Add lemon zest and 300 grams (approximately 10.6 ounces) of sugar and simmer for 40 minutes. Line a sieve with a cloth and pour in apple mixture. Rince chiles, remove seeds and ribs and mince flesh. Combine chiles, onion and vinegar in a pot and boil gently. Add remaining 600 grams (approximately 1.3 pounds) of sugar to pan and dissolve. Then stir in apple juice and bring to a boil. Reduce to a simmer and cook until syrupy. Remove from heat and let cool.

Heat oil in a pan and cook shrimp balls on each side for 3-4 minutes.

Remove and serve with sauce.
