- 6 Tbsps vegetable oil
- 2 cloves garlic cloves (peeled and chopped)
- 1 small onion (peeled and diced)
- 1 red chili pepper (rinsed; seeded and finely chopped)
- 2 red Bell pepper (rinsed; seeded and sliced)
- 1 cup sliced Mushrooms
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 Flour tortillas
- 2 cups grated Cheese
- 2 ⅔ cups boneless, cooked chicken (shredded)
Preparation steps

Preheat oven to 325º F / 160º C. Line a baking sheet with parchment paper.

Heat 4 tablespoons of the oil in a large pan and gently cook the garlic, onion and chili pepper until soft and fragrant. Add the bell peppers and mushrooms, season with salt and pepper and gently cook for 8 to 10 minutes.

Lay two tortillas on the prepared baking and sprinkle with half of the cheese. Divide the mixed vegetables and chicken between the two tortillas, season with salt and pepper and top with the remaining cheese. Cover with the remaining tortilla and press lightly. Bake in a preheated oven for 20 to 25 minutes. Cut in half and then into wedges and and serve.
