- 26 ozs Minced Beef
- 2 onions
- 3 cloves garlic cloves
- 2 sticks Celery
- 1 red chili pepper (to taste)
- 6 Tbsps Oil
- 2 cups Beef stock
- 1 ¼ cups red Kidney beans (tinned), drained
- 1 tin sweet Corn (drained)
- 2 green peppers
- ½ tsp ground Cumin
- salt
- freshly ground peppers
- 2 Tbsps chopped parsley

1 Fine grater, 1 Small pot mit Deckel, 1 Kitchen scale, 1 Wooden spoon, 1 Fluted tart pan (26-28 cm Ø), 1 Cutting board, 1 Small knife, 1 Bowl, 1 Tablespoon, 1 Mixing bowl, 1 Hand mixer, 1 Rubber spatula, 1 Wire rack, 1 Brush
Preparation steps

PREPARE THE VEGETABLES

Peel and finely dice the onions and garlic. Trim, deseed and finely chop the chillies. Trim, wash and chop the celery, reserving the leaves. Wash, trim, halve, core and dice the peppers.

BROWN THE MEAT

Heat a little oil in a very large frying pan and brown the meat, breaking it up to brown right through. (you may need to do this in batches). Return all the meat to the pan with the rest of the oil and some of the stock (200-300 ml) and cook for 10-20 minutes, until the liquid has evaporated.

ADD THE VEGETABLES

Stir in the diced peppers, onion, chilli, garlic and celery and cook for a few minutes.

Now add the tomatoes with their juice and the rest of the stock, cover and cook over a low heat for about 30 minutes.

ADD THE SWEETCORN AND RED KIDNEY BEANS

At the end of 30 minutes, add the sweetcorn and red kidney beans, season with salt and pepper and add cumin to taste. Cook for a further 15 minutes.

Serve hot, sprinkled with chopped celery leaves or chopped parsley if you wish.
