- 2 unwaxed Limes (finely grated zest)
- ¾ cup caster sugar
- ⅛ cup sunflower oil
- 3 eggs
- ⅔ cup Crème fraiche
- 0.333 cup unsalted butter (melted)
- 1 ¾ cups all-purpose flour
- 2 tsps Baking powder
- For the syrup
- ¼ cup Lime juice
- ¼ cup dark Rum
- 1 cup powdered sugar
- To serve
- Whipped cream
- grated Lime zest

1 Pot, 1 Bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Sieve, 1 Slotted spoon
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 17cm|7" cake tin and line the base with non-stick baking paper.

Beat together the lime zest, sugar, oil and eggs until blended. Beat in the creme fraiche and butter.

Sift in the flour and baking powder and stir until well mixed.

Put into the tin and bake for about 50 minutes until a skewer or wooden cocktail stick inserted into the centre comes out clean. Cool in the tin for 5 minutes.

Mix together the lime juice and rum, then stir in the icing sugar until a clear syrup.
6.
Prick the cake with a skewer all over the top, then spoon over 1/4 of the syrup. Leave for 10 minutes, spoon on more syrup and repeat until all the syrup has been used. Cover and leave to cool completely before removing from the tin.
7.
Serve in slices with whipped cream sprinkled with lime zest.
