1 Zucchini (very thinly sliced lengthways)
4 large eggs

½ cup grated Cheddar cheese

Preparation steps

Heat the oil in a frying pan. Add the courgette and cook for 2-3 minutes, until starting to turn golden.

Beat the eggs with a fork and season with a little salt and pepper.

Pour the eggs into the pan and sprinkle with the cheese. Cook over a very low heat for about 10 minutes, until the egg has almost set.
4.
Heat the grill to high. Put the pan under the hot grill for about 2 minutes, until golden. Serve warm or cold.
