Ingredients
- For the pancakes
- 3 eggs
- 250 grams Pastry flour
- ½ tsp Baking powder
- 75 grams sugar
- 400 milliliters milk
- salt
- 40 grams clarified butter
- Additional ingredients
- 400 grams Strawberries
- For the basil mousse
- ½ bunch Basil
- 1 Tbsp lemon juice
- 150 grams cream cheese
- 150 grams Quark
- 75 grams sugar
- 150 milliliters Whipped cream (at least 30% fat content)
- For garnish
- Basil
Preparation steps
Preheat the oven to 80°C (approximately 175°F) top and bottom heat. For the pancakes, separate the eggs and beat the yolks with the flour, baking powder, sugar and milk to make a smooth dough. Beat the egg whites with a pinch of salt until stiff and fold into the batter. Melt some butter in a pan, pour in small amounts of batter, and make golden brown pancakes. Keep warm in the preheated oven.
Rinse the strawberries, trim and halve lengthwise or quarter. For the basil mousse, rinse the basil, shake dry, pluck off the leaves and puree finely with the lemon juice. Mix the cream cheese with the quark, sugar and basil puree. Beat the whipping cream until stiff. Spread the pancakes on plate, top with strawberries and basil mousse and serve garnished with basil leaves.
