2.333 cups jersey royal potatoes (halved)
1 Red onion (sliced)
½ cup Feta (crumbled)
5 Radish (sliced)
1 Tbsp chopped oregano
1 Tbsp peppercorns (crushed)
For the dressing
4 Tbsps olive oil
1 Tbsp Red wine vinegar
1 Tbsp Caper (chopped)
1 clove garlic cloves (crushed)
salt
freshly ground Black pepper
To garnish

Preparation steps

1.
Cook the potatoes in salted boiling water for 15- 20 minutes until tender. Drain well and leave to cool.

Gently mix the potatoes with the salad ingredients in a large bowl
3.
For the dressing: whisk all the ingredients until well blended. Pour over the salad and toss thoroughly.
4.
Put the salad on a serving plate and garnish with mint.
