If you'd like a bit more of an exotic flavor, you can replace the butter with coconut oil.

Ingredients
- For the dough
- 8 ⅘ ozs Pastry flour (250 grams)
- 2 tsps Baking powder
- 3 ozs butter
- 1 egg
- 3 Tbsps honey
- 5 ozs Yogurt (0.1% fat)
- 3 ½ ozs sour Whipped cream
Preparation steps
Rinse and dry rhubarb, cut into small pieces and sprinkle with flour.
Butter 12 small ramekins (each about 3 inches in diameter).
Combine flour with baking powder. Melt butter and let it cool slightly. Combine egg, honey, yogurt, and sour cream, add melted butter, Gradually add flour and fold in rhubarb, mix well. Fill ramekins with batter and bake in a preheated oven at 350°F for 25-30 minutes or until golden brown. Let cool slightly and invert onto plates. Dust with powdered sugar and serve.
