70 grams Crème fraiche
20 grams Parmesan

50 grams Smoked salmon
1 bunch Cress
8 fresh Quail egg

Preparation steps

1.

Toast bread and cut out 16 discs, each about 4 cm (approximately 1 1/2 inch) wide. Mix together creme fraiche and Parmesan and season with pepper. Trim cress with kitchen shears.

2.

Cook quail eggs in boiling water for about 6 minutes. Rinse in cold water, peel and halve. Spread toast discs with creme fraiche mixture and sprinkle with cress. Top each disc with 1 half of an egg, and form a rim around each egg half with salmon slices. Place on a platter and serve.
