- 3 fresh Cucumber
- 1 ¼ cups smoked Salmon (finely chopped)
- 1 ¼ cups Smoked trout (finely chopped)
- 3 Tbsps cream cheese (softened)
- 3 Tbsps lemon juice (divided)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)
- 2 Tbsps olive oil
- 1 ½ cups fresh Watermelon (rind removed and cut into bite-size pieces)
- 1 handful salad (or borage; to serve)
Preparation steps

Peel and trim cucumbers. Cut diagonally in 1 1/2-inch pieces, hollow out the seeds.

In a bowl, combine the finely chopped smoked salmon and trout, cream cheese, 1 tablespoon lemon juice, salt and pepper, mixing well the thoroughly incorporate. Using a spoon fill in the hollowed-out cucumbers with the fish and cream cheese mixture.

In a small bowl, mix the remaining lemon juice, and oil; season with salt and pepper.

Garnish four individual plates with greens or borage. Divide the stuffed cucumbers and watermelon evenly among the plates. Drizzle the cucumbers with lemon and oil. Serve.
