- 2 Fennel bulb
- 1 Kohlrabi
- 4 Tbsps white balsamic vinegar
- 3 tsps sugar
- 50 milliliters olive oil
- 1 tsp fennel seeds
- salt
- freshly ground peppers
- 100 grams Strawberries
- 1 tsp thyme
- 1 tsp Raspberry vinegar
- 150 grams Smoked salmon (in slices)
- fresh thyme (for garnish)
Preparation steps

Trim fennel and kohlrabi and rinse. Cut the fennel into thin strips, halve the kohlrabi and cut into thin slices. Mix vegetables with balsamic vinegar, 1 teaspoon of sugar, olive oil and fennel seeds. Season with salt and pepper and allow to marinate until serving.

Meanwhile, rinse, trim and chop the strawberries. Combine berries with thyme leaves, raspberry vinegar and remaining sugar (2 teaspoons). Let stand for 30 minutes.

Arrange the vegetables and the strawberry dressing on plates and distribute the smoked salmon on top. Garnish with fresh thyme.
