Preparation steps

For the vanilla sauce: Combine the milk and cream in a saucepan. Cut a vanilla bean in half lengthwsie and scrape out the seeds with a sharp knife. Place the vanilla bean pod and seeds in the saucepan with the milk mixture and simmer for 5 minutes. Stir in the sugar. In a bowl, whisk the cornstarch with cold water until a paste is formed. Whisk into the milk mixture and simmer until thickened, about 2-3 minutes. Pour through a sieve into a bowl.

For the snow eggs: In a bowl, beat the egg whites until soft peaks form. Continue beating while adding the sugar 1 spoonful at a time until very stiff and glossy. Use 2 tablespoons to drop oval meringues on a parchment-lined baking sheet. Bake in a 150°C (approximately 300°F)(gas mark 1-2, fan: 130 degrees) oven for 10 minutes.

Bring a wide pot of water to a boil. Gently place the snow eggs in the water, cover and simmer for 10 minutes. Remove the snow eggs with a slotted spoon.

For the caramel: Cook the sugar in a small saucepan until golden brown.

Place the vanilla sauce on plates. Top with a snow egg and serve with the caramel drizzled overtop.
