3.333 cups plain flour

1 tsp sugar
1 egg
¼ cup melted butter
1 tsp salt

2 ½ cups Feta (crumbled)

Preparation steps

1.
Place the flour in a a bowl and make a well in the centre. Add the yeast, sugar and 3-4 tbsp lukewarm water and mix with a little of the flour. Cover and leave for approx. 15 minutes.

Add the egg, the melted butter and salt and knead to a smooth dough with approx. 200 ml lukewarm water. The dough should not stick to the sides of the bowl. Add a little more flour if necessary. Cover and let rise for approx. 45 minutes.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

For the filling, mash the crumbled feta with a fork and mix with approx. 75 g of the melted butter.

Knead the dough thoroughly on a floured work surface and divide into 4 portions. Roll out each portion to a circle approx. 3 mm thick and spread a little feta-butter on each. Roll up the circles and cut into pieces, with slightly slanted sides. Place the pieces close together in the greased baking tin. Cover and let rise again for approx. 30 minutes.
6.
Mix the egg yolk with the remaining butter and brush over the dough. Bake for approx. 40 minutes until golden brown.
