Ingredients

For the pastry
1.333 cups plain flour
½ cup cold butter
½ cup powdered sugar
1 egg
flour (for the work surface)
butter (for the dish)
For the filling
6 fresh Figs (cut into eighths)
¾ cup Chestnuts (ready-cooked, vacuum-packed), roughly chopped
1 cup goat's milk cream cheese
1 ½ cups grated Cheese
1 cup cream (at least 30% fat)
3 eggs
To serve
Lettuce (if desired)

Preparation steps

1.
Knead the pastry ingredients quickly into a rough dough. Roll the pastry into a ball, wrap in clingfilm and chill for approx. 1 hour.

Heat the oven to 180° (160° in a fan oven), 350°F, gas 4.

Butter the quiche dish. Roll out the pastry on a floured surface and place in the dish. Trim the edges to fit the dish.

Arrange the fig pieces on the pastry base. Sprinkle the chestnuts over them.
5.
Mix the cream cheese with half the Alpine cheese, the cream and the eggs. Season with salt and white pepper and pour over the figs. Sprinkle the remaining cheese over and bake for approx. 45 minutes until golden brown.
6.
Remove from the oven and let cool until lukewarm. The quiche may be served with lettuce.
