1 kilogram Beef (from the rib or shoulder)
4 Sweet potato
4 large carrots
2 fresh Corn
4 garlic cloves
300 milliliters finished Beef broth
5 Tbsps vegetable oil
2 bay leaves
1 Tbsp cornstarch
salt
freshly ground peppers
1 tsp cayenne pepper
1 Tbsp sugar
2 Tbsps apple cider vinegar

Preparation steps

Rinse beef, pat dry and cut into cubes about 2 cm (approximately 3/4 inch). Peel carrots, quarter lengthwise and cut into pieces. Peel and dice the sweet potatoes. Rinse corn cobs and cook in plenty of sugar water for about 10 minutes, until the corn kernels are soft. Drain corn cobs and cut into thick slices. Peel garlic and chop finely.

Heat oil in a heavy pan and brown the meat on all sides. Pour in the beef broth and add sweet potatoes, carrots, bay leaves and garlic. Season with salt, pepper, cayenne pepper, sugar and cider vinegar. Cover and cook over low heat for 40 minutes. Take 3 tablespoons broth, stir in the cornstarch and add to the pot. Continue cooking over low heat and let thicken the broth while stirring. Add corn cobs and cook another 10 minutes. Season further with cayenne if desired. Serve.
