- 2 eggs
- 2 cups Arugula
- 2 cups Frisée
- 4 day-old Bread roll (halved and hollowed out)
- 1 red pepper (sliced)
- 1 stick Celery (finely chopped)
- ½ small white onion (diced)
- 1 ¼ cups canned Tuna (drained)
- ½ cup Anchovy fillet
- salt
- Black pepper
Preparation steps
1.
Place the eggs in a saucepan of boiling water and cook for 12-14 minutes.
2.
Once cooked, drain them and run under cold water until cold. Peel and slice in half.
3.
Arrange the rocket and frissee evenly in the bottom half of the rolls. Top with a combination of red pepper, celery, and onion.
4.
Follow with tuna and a few anchovy fillets. Top with half a boiled egg and then season generously with salt and black pepper.
5.
Serve immediately.
