- 4 Tbsps olive oil
- 4 Chicken thigh
- 1 onion (peeled and sliced)
- 2 cloves garlic cloves (finely chopped)
- 2 green peppers (seeded and cut into strips)
- 1 tsp dried herbes de Provence
- ½ cup white wine
- 2 cups canned Plum tomato
- salt

Preparation steps

Preheat the oven to 180°C | 350F | gas 4

Heat half the olive oil in a large casserole dish, then add the chicken thighs. Brown on all sides over a medium heat, then remove from the pan and set aside.

Add the rest of the olive oil, then the onion, garlic and peppers and fry over a low heat until softened – about 10 minutes.

Add the chicken back to the pan, then add the herbs and white wine. Allow the wine to bubble up and reduce a little for two to three minutes.

Add the tomatoes and salt and pepper and bring back to the boil.

Cover the dish with a lid or foil and place in the oven for about 40-45 minutes or until the chicken is cooked through. Make sure no pink juices run out when pierce with a knife or skewer.
